Winemaker Notes Bright hues of yellow gold; the nose has an intense lemon meringue pie lift with a mineral edge, followed by subtle vanillin oak and white peaches. The palate is generous with lemon, white peach and biscuit flavours lingering over a minerally soft, powdery texture, finishing long with crisp grapefruit acidity. Vineyards The Chardonnay at Fonty's Pool Vineyard is a Gingin clone grown on ironstone gravelly loams associated with the native marri and jarrah eucalypts The fruit was sourced from two blocks (12 x 75 cl)

Fonty's Pool Pinot Noir Pemberton Western Australia
Description: Winemaker Notes Bright deep garnet in colour; intense aromas of lifted raspberry, cherry liqueur fruits mixed with toasty charry oak over a brooding layer of smoked meats. Juicy dark cherries are complemented with supple mouth filling tannins. A savoury backbone and a charry oak edge underlie a tightly structured wine which finishes long and clean. Drink now or in 3-5 years Vineyards The year 2001 saw two new clones of pinot noir come on stream adding to the already mature 'Droopy' clone at Fonty's Pool Vineyard. All the clones are grown on ironstone gravelly loams associated with the native marri and jarrah eucalypts . The original pinot noir vines were planted in 1989, whilst the two new clones were planted in 1997 and 1999 with all vines spaced at 3.0 x 1.5 metres and either spur or cane pruned on a bilateral cordon. Shoots are trained vertically between wires on a 1.8 m trellis. Extensive hand positioning of shoots, selective leaf removal on the eastern aspect of rows and bunch thinning is practiced. The deep soils require irrigation to be used only sparingly to encourage balanced vine growth and physiological development. (12 x 75 cl) Price: £125.26

VINEYARD: Selected Chardonnay vineyards in the Robertson area and the Viognier hails from Ladismith in the Klein Karoo. CELLAR TREATMENT: The two varieties were fermented separately. A small percentage of Chardonnay was fermented in staved stainless steel tanks to generate an added dimension of richness. The balance of the Chardonnay and all of the Viognier was barrel fermented in new and 2 nd fill French oak barrels. No malolactic fermentation took place. Description: This wine is a blend of 55% Chardonnay and 45% Viognier that is showing a pale straw colour with an inviting, elegant nose of tropical fruits as well as a lovely hint of jasmine culminating in a long and rich palate that ends with a zesty citrus finish. The mature vines of the Chardonnay bring a solid palate structure dominated by ripe pear flavours, married with the aromatic flavours of peaches and lychees from the ripe Viognier fruit. All the fruit is sourced from the Minervois in the South West of the Languedoc region, Southern France. The Chardonnay comes from older, low yielding vines on the lower slopes of the Montagnes Noires, while small vineyards on the banks of the River Aude are the source for the Viognier. Here soils with high clay content produce vigorous young vines, with regular thinning of the foliage so that the open canopy allows maximum ripening and intensity of flavour. The fruit is harvested in the early hours of the morning when temperatures are coolest to ensure capturing maximum floral fruit characters of the Viognier grape. Both Viognier and Chardonnay are allowed to remain on their skins for 4 to 6 hours after crushing to achieve a balance of palate structure and colour. Next they undergo a long, slow, cool fermentation, the Chardonnay with a traditional Burgundian yeast, while the young Viognier fruit is fermented with an aromatic yeast often used with Sauvignon Blanc.
