Santa Margherita Prosecco di Valdobbiadene Brut DOC Description: Santa Margherita is one of the two italian firms permitted, by ministerial decree, to make wines sparkling outside the region in which they are grown. The Santa Margherita trademark is a graphic stylization of the Renaissance drawing of Villa Marzotto at Portogruaro. It is the distinguishing mark for the labels of its famous wines. The splendid villa was built around 1540 in the historical center and today hosts the city cultural center. The origins of Prosecco are lost in time. However, it was only towards the end of the XIX century that Prosecco started to make a name for itself. From then on, it grew steadily in popularity, and today the Prosecco di Valdobbiadene is undeniably one of the best-known and most highly-appreciated italian wines. The still wine is placed in an autoclave for second fermentation, where it ferments for 18-20 days with selected yeasts at a controlled temperature. When the desired pressure is reached , the mass is cooled to block fermentation and promote stabilisation. Afterwards, the wine is kept at a controlled temperature for at least a further month, so as to favour the natural refinement in contact with the yeasts deposited on the bottom of the autoclave. At the end of this phase, the wine is filtered and bottled. This is a sparkling wine with a clean nose, pleasantly fruity, with whiffs of rennet apples and peach blossoms. The delicate and balanced taste of this prosecco is one to be savoured and enjoyed. (6 x 75 cl) Price: £68.69

Az. Ag.di Follador Loris CASA COSTE PIANE Prosecco di Valdobbiadene DOC Description: Casa Coste Piane is a small estate in Santo Stefano, heart of the Valdobbiadene area. For generations their wine had been sold in bulk but since 1983 they decided to bottle the production themselves. The vineyards lie on slopes close to the cellar and the vines are on average 60 years old and their roots can grow up to 30-40 metres long. This Prosecco is a gem, it is one of the few made in the champenoise method wherein the second fermentation takes place in the bottle. Harvest is usually between the last week of September and the first week of October. In April the wine is bottled without the addition of yeast and sugar, subsequently the indigenous yeast contained in the wine starts a second spontaneous fermentation that lasts for approximately four weeks. After this the wine spends a further four weeks sur lie. The process of "disgorgement" is not practised, therefore the yeasts are still present in the bottle. This fine Prosecco is clean, pure and elegant, mineral with crackling citrus notes, easy-drinking and at the same time complex. (6 x 75 cl) Price: £79.11
