David Stare's pioneering vision launched a new era of premium wine production in the Dry Creek Valley. Inspired by his travels throughout the traditional wine regions of France and Germany, Dave's focus was ever on quality. To persue this focus, small batch winemaking has been adopted because individual-lot winemaking promotes increased knowledge about how to manage each vineyard while offering maximum blending options and enhanced quality control. Dry Creek Vineyard insists on crafting each lot of wine separately with each vineyard lot crushed, fermented, and barrel aged separately. Approximately 75-100 different wines are produced each vintage, where fining is the exception, not the rule. This CabernetSauvignon has a little Merlot and Cabernet Franc to enhance this wine. Intense berry fruit dominate the aromas while this multi-layered wine features ripe fruits and cassis flavours with chocolate, cedar, mint, and herbal notes. Full-bodied with a wonderfully textured mouthfeel there are flavours of blackberry and cassis that abound in this elegantly structured wine. Description: The Grey Label Langhorne Creek CabernetSauvignon is deep red in colour. The bouquet of rich berry fruit with aromas of spice, mint and eucalyptus is given complexity by hints of dark chocolate. These aromas develop on the palate, which is an elegant mouthful of flavour with soft, well-integrated tannins, subtle vanillin oak characters and a lingering finish. VITICULTURE The fruit for this wine was sourced from the outstanding CabernetSauvignon vineyards at Langhorne Creek. Langhorne Creek has long been the preferred region for Grey Label CabernetSauvignon as the rich, deep alluvial soils have been a maritime influence, producing fruit with great richness and depth of flavour. WINEMAKING Following crushing the wine was left to ferment on the skins for between five to seven days, allowing for the optimum release of colour and flavour. This technique maximised the intensity of fruit flavour without extracting excessive tannins to ensure that this wine is approachable in its youth, a hallmark of Wolf Blass wines. Individual parcels completed fermentation in new and seasoned French and American oak then wine was returned to the original oak barrels for 18 months maturation. Description: Our Barrelli Creek CabernetSauvignon is a complex and intense wine with aromas and flavors of black currant, black cherry, and cassis. With balanced tannins and sweet vanilla and spice flavors from oak barrel aging, this wine has a smooth finish. With three generations and over six decades of experience in northern Sonoma, our family believes that the secret to producing world class wines is to start with world class grapes. We meticulously shoot positioned and cluster thinned grapes for this wine from only the finest blocks at our Barrelli Creek Vineyard. Grapes for this wine were de-stemmed, but not crushed, to retain 20%-30% whole berries for fermentation. This process allows us to better retain the grape's varietal essence and minimize bitter tannin extraction in the wine. The wine was aged in European, French, and American oak barrels for an average of 25 months. This wine then completed malolactic fermentation and, to enhance bouquet, flavor, and body was not fined and only minimally filtered prior to bottling. 96% Barrelli Creek CabernetSauvignon, 3% Barrelli Creek Petite Syrah In the hillside benchlands of the Alexander Valley, winegrowing at our family's Barrelli Creek Vineyard began over a century ago when Italian immigrants first planted vines. In addition, the temperate, Region III climate that makes this one of the warmest of our Sonoma County vineyards, adds richness, depth, and intensity to the CabernetSauvignon grapes grown here. Description: The Bremerton story began in 1985 when Craig and Mignonne Willson purchased the property and established a long term restoration and development plan. The winery was established in 1988 and now has 110 acres planted at Langhorne Creek and is joint owner and manager of another 180 acres from which it selects the best fruit each year for its wines. Best quality practices ensure best quality grapes and the Bremerton vineyards predominantly grow CabernetSauvignon, Shiraz and Merlot, with small plantings of Sauvignon Blanc, Verdelho, Chardonnay, Malbec and Petit Verdot. The winemaking team headed by family member and winemaker Rebecca Willson has taken the quality of the wines to new standards. Rebecca seeks the best possible fruit from the Bremerton Estate and other specialised Langhorne Creek vineyards to craft traditional, full bodied, full flavoured, mouth filling Langhorne Creek wines that show a consistency of style whilst encouraging the true varietal grape characteristics to be expressed.
