Description: The rich history of Australia's gold mining era has inspired pioneering winemaker, Neill Robb, to create a collection of hand crafted individual wines from the quality wine growing regions of King and Yarra Valley, Victoria. Medium straw in colour, the nose offers honey, peach stone and mineral aromas with whiffs of gunsmoke and flint. This is a full-bodied wine showing balance between acid and fruit, a rounded mid-palate and a seductive stoney/apricot texture, finishing dry with long mineral and honey characters. The grapes are sourced from Cavedon's vineyard high in the King Valley of North-Eastern Victoria, where the cold nights, red volcanic soils and eastern aspect help ripening and retain fresh acidities. Description: The wine shows a gentle straw colour with a fine persistent bead achieved from a long, slow secondary fermentation in the bottle under very cool conditions. The nose is lifted and elegant with lovely citrus overtones of lime and granny smith apples. The wine was made in strict adherence to traditional Méthode Champenoise techniques. Each parcel of fruit underwent malo-lactic fermentation before being blended and undergoing its second fermentation in bottle. It spent 5 years maturing on yeast lees after the second fermentation was completed. The palate is creamy and elegant with a crisp, dry finish and refreshing acidity. All fruit for the Patricia Pinot Chardonnay Brut is grown at our high altitude Whitlands vineyard where the climate is ideal for retaining acidity essential for this style of wine. This vineyard is located at 800m above sea level in the sub-alpine area at the top end of the King Valley. The wine is 68% Pinot Noir, 20% Chardonnay and 12% Pinot Meunier. Low phenolic extraction is essential to the style, so the fruit is hand picked and whole bunch pressed in air bag presses. Only the first 500L per tonne is used, to minimise the phenolic content. Description: An attractive nose of ripe berry fruit leads to a palate exhibiting soft berry fruit with good firm tannins and vanilla oak overtones. The wine lingers in your mouth with a persistent dry finish. Merlot is a variety that softens quickly and 2 to 3 years in bottle would produce a soft mellow red. Select this wine to partner lamb or pork dishes for maximum enjoyment. Medium bodied red with a softer plumy palate. The style is light with excellent fruity aromas and flavours that still maintains a good tannic structure. Dal Zotto Estate Winery is located in the King Valley in the north of Victoria not far from the Great Murray River which forms the border between Victoria and New South Wales.
