Fermented and then matured from six to eight months in 60% new French oak barrels. During this time it goes through spontaneous malolactic fermentation. Held for six months before release to ensure integration of wood and fruit in a toasty, weighty style. In the Mitchell Beazley Guide to Chardonnay Wines, Klein Constantia is one of only six New World producers to achieve the maximum possible rating. (6 x 75 cl)
