Hints of new oak integrated and rounded with vanilla and chocolate, create a long warm rewarding finish creating a kaleidoscope of flavours. Its richness has to be tasted to be believed. Winemaking Crushed and de-stemmed into closed fermenters. Inoculated 1 day after crushing. Maximum fermentation temperature 30ºC. Pumped over 2 x per day, incoporating oxygen. Rack and return every second day. Pressed using a membrane press. Pressings kept from freerun, then fined and re-blended back to the freerun. The wine was then inocluated for malolactic fermentation. Pear drops, peach skin with herbal undertones combine with a crisp multi-layered textured finish to create a fine example of this great variety. Inhibiting malolactic fermentation has preserved crisp natural acids which highlight the varietal fruit of this wine. Winemaking Crushed and de-stemmed then pressed using a membrane press. Pressings kept separate from freerun then fined and re-blended back to the freerun. Fermented using French yeast at 12-15ºC. The light fluffy lees were reincorporated to the wine to add mouth feel and structure. We racked the wine from lees after four months, filtered and bottled. (12 x 75 cl) Price: £112.61

Description: Tasting Note Deep Plum Colour. The nose shows a fragrant combination of red cherry and strawberry aromas. It is rich, juicy and has plenty of mouth-coating flavour. The palate displays layers of red berry fruit which combine with the mineral notes, cut through the hedonistic fruit and lead into a long dry finish. It has excellent intensity and depth of fruit which is carried through to the back palate by the clean acidity and just a touch of tannin to avoid any cloying. Winemaking A combination of whole berry and low fermentation temperatures ensures a lifted bouquet. The juice is left on skins for 3 days, then the freerun only is drained off and used. The fermentation continues at low temperatures for 3 weeks and is then stopped, with a very slight amount of natural grape sugar retained. The wine is then cold stabilised and filtered before bottling. Vineyard The grapes come from the Willunga district of McLaren Vale, where the heavy grey loam soils over sandstone, intermixed with black Biscay clay, combined with the maritime climate, contribute to an to an even ripening period and the development of rich fruit flavours. Yield is around 2 tonnes an acre. Italian born, Giacomo was known as the King of all Jesters. Quick witted and a skilled performer, he delighted audiences with his magical acts, juggling, story-telling, music and sorcery. Jester to the Duke's Court, he spent his early years surrounded by the castle's opulence and grandeur. Promiscuous by nature, in 1575 he was promptly banished due to scandalous behaviour involving the duke's daughter. Fermentation was conducted in stainless steel tanks at low temperature with a specialist strain of Riesling yeast designed to retain aromatics. The wine has an alluring perfume of root-ginger, lantana and limes while the palate is light, taut and crisp. A great wine to drink as an aperitif or with rich creamy foods, it provides an interesting counterpoint in texture with poultry, grilled fish or spicy Asian inspired cuisine. Description: Winemaking has been a tradition in the Gallo family for almost 70 years and the Estate bottled range is one of their flagship wines. The grapes were specifically selected by the Gallo winemakers from one of their family vineyards, Stefani Vineyard, located in Sonoma County. Sonoma is situated 100 km north of San Francisco, west of Napa, and alongside the Pacific Ocean. In the northern region of Sonoma County lies Dry Creek Valley, where Stefani Vineyard rests in the central corridor. Vines were first planted here by the Stefani family at the turn of the century. The soil consists of as much as 30% gravel and small stones, a combination of Pleasanton and Clough series. Today, this unique climate/soil combination produces Cabernet Sauvignon grapes with intense cassis and black cherry aromas complemented by cedary, spicy flavours in the finish. The Cabernet Sauvignon grapes were 100% estate grown and hand harvested. To intensify varietal character, Gallo employed site-specific vertical trellising, and used meticulous shoot and leaf removal to ensure the grape clusters received just the right amount of sunlight exposure for optimal ripening. The hand-harvested clusters were de-stemmed but not crushed, to increase the percentage of whole berries in the fermenter and reduce the potential for bitter tannin extraction. Once dry, the free-run wine was aged in 100% French oak barrels for an average of 21 months to enhance bouquet, flavour and body. The wine completed malolactic fermentation, and was bottled unfined and with minimal filtration. This Ernest & Julio Gallo Estate Cabernet Sauvignon is a full-bodied wine with firm tannins and a deep red colour.
