This small family-owned and run domaine cultivates 24 acres, all in the small village of Fuisse. This village is said to produce the ripest Pouilly Fuisse with the most flavour, due to its situation and soil. It lies on gently undulating hills, thus capturing the sunlight easily and the chalky soil is a mixture of limestone and slate. The emphasis at Domaine Thibert is definitely on quality rather than quantity and they produce solely Pouilly Fuisse from chardonnay grapes. The wine is fermented in a combination of stainless steel and barrique and then aged in a barrel. The Thiberts espouse natural remedies in the vineyard, working the soil to control vigour and yields. Severe bunch and leaf thinning and lutte raisonnée , aerating the soil to allow the roots to search more deeply for water and harvesting by hand at the maximum of maturity ensures wines of concentration and complexity.
