Mondavi selected the majority of the grapes from the center of Napa Valley, a region well known for producing intensely flavoured Cabernet family grape varieties. The balance of sunny days and cool, foggy nights in Napa Valley is perfect for developing complex, ripe flavours and supple tannins in CabernetSauvignon. A range of soils-from alluvial to lean volcanic-contributes to the diverse flavours in this wine. Mondavi chose 35% of the grapes from the Oakville AVA, including 33% from Robert Mondavi To Kalon Vineyard, and 22% from the Stags Leap District AVA, including 7% from Robert Mondavi Wappo Hill Vineyard. The balance of the grapes came from the Rutherford AVA and other Napa Valley vineyards. Ripe dark berry, spice, violet and chocolate weave through the aromas and smooth, velvety flavours of this Napa Valley CabernetSauvignon. These rich, expressive flavours come from the soils and climates of vineyards located primarily in the geographic center of Napa Valley. Firm tannins support the abundant fruit character and give the wine excellent length on the palate. Fermentation with both cultured and native yeast strains gives layers of nuance to the wine, and extended skin contact intensifies varietal complexity and softens tannins. Finally, Mondavi aged the wine in French oak chateau barrels for over 18 months to enhance the lush texture and add spicy oak accents to this wine. (12 x 75 cl) Price: £247.24

Gentle handling of the grapes, must and wine captured the aromatic character and silky texture of this Merlot. After lightly crushing the grapes, the must was fermented in temperature controlled tanks until dry. Following fermentation, Mondavi kept the skins with the wine for a total of 24 days to naturally soften the tannins and develop varietal complexity. Malolactic fermentation enhanced the wine's roundness and depth. Finally the wine is aged two-thirds in small French and American oak barrels for 5 months to add a hint of oak complexity while retaining the focused fruit flavours. A lovely deep red coloured wine with aromas of dark forrest fruits. For decades they have sourced fruit from coastal regions, and in 1994 introduced Robert MondaviPrivate Selection wines to exhibit the high quality and character of the coastal grapes and vineyards. Mondavi harvested 96% of the grapes for the Chardonnay from the Central Coast AVA, with 81% of the fruit selected from Monterey County and 15% from Santa Barbara County. The balance of the fruit was selected from the North Coast AVA. The marine influence of these two regions slows ripening of Chardonnay grapes, developing vibrant flavours and retaining crisp acidity. Once harvested the grapes were pressed to capture the fresh, lively flavours. 44% of the wine was fermented in small oak barrels for complexity, with the balance in stainless steel tanks to enhance the fruitiness of the wine. After the wine was fermented dry, a selected portion of the blend undergoes partial malolactic fermentation to give a rich, round mouthfeel. Finally barrel-fermented ageing of the wine occurred sur lie in small French and American oak barrels for 10 months to integrate flavours and add soft oak nuances. To heighten the wine's floral and spice aromatics, Mondavi added dashes of Muscat, Sauvignon Blanc and Viognier. Elegant tiers of fresh pear, apple and tropical fruit character mingle with delicate floral accents while the wine's vibrant flavours and beautiful balance come from vineyards along California's Central Coast American Viticultural Area . Here, cool Pacific winds temper the summer sun and give Chardonnay grapes ripe flavours with crisp acidity. Fermentation in a combination of small oak barrels and stainless steel tanks wove oak complexity through the wine's array of fruit flavours, and when the wine was aged on yeast it enhanced the silky texture and lingering finish. For vivid fruit expression, Mondavi harvested 95% of the grapes from Monterey County, with the balance from Santa Barbara and San Luis Obispo Counties. Approximately half of the Pinot Noir grapes were harvested from its own vineyards, the balance from well known local growers. This wine has a little Syrah and this has come from both San Luis Obispo and Monterey Counties. To achieve the fruit-forward style of this Pinot Noir Mondavi lightly crushed the grapes and fermented the must in temperature controlled tanks. After the wine fermented dry , it was left on the skins with the wine for a total of 13 days to naturally soften tannins and develop varietal complexity. The wine completed malolactic fermentation for roundness and depth and was aged for five months, in a combination of new and older French and American oak barrels, to add toasty nuances to the lush fruit flavours. Additionally, a blend of 5% Syrah enhances the spicy profile of the wine. The wine's silky layers of cherry, raspberry and red plum intertwine with fragrant allspice and floral accents. All of the grapes for this wine were grown in the world-renowned Oakville region surrounding our winery. Designated an American Viticultural Area in 1993, Oakville is distinguished by an alluvial fan extending from the base of the Mayacamas Mountains that form the valley's western border. The Oakville bench, which lies against the hills, has well-drained soils that allow deep rooting and the development of complex flavours in the grapes. Mondavi selected all Oakville bench vineyards for this wine, including 82% from Robert Mondavi's historic To Kalon Vineyard. Mondavihand-harvested the grapes into 40-lb. boxes during the cool morning hours. The clusters were then hand-sorted on tables in the To Kalon fermentation cellar for optimum quality. The grapes were destemmed and lightly crushed directly into a new 17-ton oak fermentation tank. The must was fermented with a combination of native and cultured yeast for layers of complexity, and follwed this with 24.5 days of skin contact to soften tannins. After the free-run wine was drained off the pomace, the drop-gate was opened to gravity-convey the pomace to a gentle basket press. The wine was then gravity-fed to barrels to undergo malolactic fermentation and ageing. To achieve natural clarity, the wine was racked three times during 16 months of ageing in traditional French oak chateau barrels . The wine was then bottled without fining or filtration. The ripe, sweet fruit character of the CabernetSauvignon exudes creme de cassis and juicy blackberry character. Complex nuances of spices, vanilla, minerals and cedar weave through the lush fruit flavours culminating in a long finish. (6 x 75 cl) Price: £140.32
