The wine was handcrafted in the To Kalon Fermentation Cellar with traditional techniques, including hand-sorting of the clusters, gravity-flow movement of the must and wine, and fermentation in a traditional oak tank. The wine then undergoes Sixteen months of ageing in new French oak chateau barrels that added vanilla and toasty oak accents. To retain fully this wine's enormous depth, texture and length of finish, it was bottled without fining or filtration. Deep, intense dark fruit character, with mineral, violet and earthy truffle complexity, this wine is powerful yet elegant, with beautifully integrated firm, muscular tannins, promising long ageing potential. The grapes were selected from the Los Carneros American Viticultural Area , including 75% from our Huichica Hills Vineyard. One of the most temperamental grape varieties, Pinot Noir vines thrive in these the cool, windy rolling hills that span the southernmost tip of Napa and Sonoma Valleys, developing small crops of vibrantly flavored fruit. Extremely gentle handling through all phases of winemaking enabled Mondavi to bottle this wine without filtration after 10 months of barrel ageing. This has produced a deep red coloured wine with aromas of black cherry, rose, forest and warm spice complexity that fan out across the palate. The Fume Blanc Reserve is handcrafted from Sauvignon Blanc and Semillon grapes selected exclusively from the historic To Kalon Vineyard. Located at the base of the Mayacamas Mountains in Napa Valley's Oakville region, To Kalon has deep, alluvial soils that create a myriad of flavors in Sauvignon Blanc grapes. The To Kalon terroir is truely expressed in the wine as a silky melange of tropical fruit, floral jasmine tea and exotic spices. The Juice is Fermented entirely in small, French oak chateau barrels and the yeast is frequently hand-stirred during more than ten months of barrel ageing.
