McWilliams ICON Cabernet Sauvignon Coonawarra SouthAustralia Description: Colour: Deep crimson with a ruby hue.Bouquet: Powerful and complex, with cassis, blackberry and plum aromas accompanied by toasty vanillin oak and dark chocolate characters derived from barrel fermentation and maturation. Palate: Complex palate with rich cassis and blackberry fruit flavours highlighted by characteristic minty notes. Dark chocolate and spicy oak flavours compliment this full bodied wine style, which displays a long, velvety, fine-grained tannin finish. Cellaring: Drinking well now, but will develop further with up to ten years in the cellar. Winemaker Notes: After crushing, the must was fermented in headed-down stainless steel fermenters. The juice was pumped over three times a day for seven days to ensure maximum extraction of colour and flavour. The juice was then drained from the tank and the skins pressed. The wine then completed primary and malolactic fermentation in a combination of new and used French and American oak barriques, hogsheads and puncheons. Following fermentation, the wine was racked off lees and returned to the same barrels, where it was matured for 20 months. Premium fruit for this wine was sourced from McWilliam's vineyards in the famous Coonawarra district in SouthAustralia. The fruit was harvested in mid March to early April. Bouquet: Complex, savoury nose of spice, white pepper, blackberry and ripe aromas combine with characters of cedar oak, toast and vanilla. Palate: A refined savoury palate of plum and blackberry fruit flavours integrated with complex spice nutmeg, cinnamon and white pepper characters. Well integrated toasty cedar and vanilla oak flavours are present, derived from barrel fermentation and maturation. Cellaring: Drinking well now, but will develop further with four to eight years in the cellar. Winemaker Notes: After crushing, the must was fermented in headed-down stainless steel fermenters. Bouquet: Complex and intense with spice, plum and mulberry fruit characters, rich dusty cedar and cinnamon oak aromas. Dark chocolate and marzipan, derived from barrel maturation and bottle-age, are also evident. Palate: Rich and full-bodied with layers of ripe plum, spice and blackcurrant fruit flavours over spicy cinnamon, cedar oak and smooth dark chocolate. The wine finishes long and dry, with fine-grained dusty tannins. Cellaring: This wine is enjoyable now, but will benefit from five to ten years careful cellaring. Decant before serving. Winemaker Notes: After crushing, the must was transferred to headed-down fermentation tanks for the initiation of fermentation. To assist extraction of colour and flavour, the juice was pumped over three times daily for seven days. The juice was drained from the tank and the skins pressed, prior to transfer to 100 per cent new French hogsheads to complete primary and malolactic fermentation. Following fermentation, the wine was racked and then transferred to new oak hogsheads , where it was matured for 26 months. The Fruit: This super-premium Shiraz is sourced entirely from the original, 100-year-old vines on the acclaimed Laira Vineyard, and is named after Captain Stentiford, the English sea captain who established the vineyard in 1893. Description: Colour: Very pale yellow straw. Bouquet: A complex, intense and integrated mix of citrus, lime, lemon blossom and herbs. Palate: Lime and citrus flavours, supported by a fine acid structure and cut grass complexity. Cellar: Can support careful cellaring for up to ten years from vintage. Winemaking Notes After crushing and de-stemming, the must was chilled and the juice drained off. After cold settling for 48 hours, the clear juice was racked, inoculated with a neutral yeast and allowed to ferment slowly at a cool temperature for a period of four weeks. One month after fermentation, the wine was blended, heat and cold stabilised, and sterile filtered. The wine was bottled in July 2000. Handling has been kept to a minimum to protect the wine's delicate, pure fruit flavours. Background Information. A 100 per cent Semillon sourced primarily from Mount Pleasant's Lovedale and Middle Creek vineyards, with the balance from a selection of the best and oldest vineyard sites in Pokolbin, in the lower Hunter ValleyThe grapes were hand-picked from late January to mid-February.
