Description: During the Middle Ages a small church was erected along the antique Domitian Way between Nimes and Montpellier in the heart of Languedoc Roussillon and named Saint-Paul de Cabrieres. Out of respect to this bygone monument the domain that was built on its ruins bears its name today: Chateau Gres-Saint Paul. Property of the Serviere family since 1830, the 26 ha of vineyards are situated in the commune of Lunel bordering the Mediterranean Sea and overlooking the Camargue and Etang de L'Or. The annual rainfall ranges betwween 600 and 700 mm with uneven distribution where there are 50 to 70 rainless days in summer. During the scorching summer heat the terroir benefits from the evening cool breezes off the nearby Mediterranean Sea, while this cool microclimate at an altitude of almost 50 meters allows the wine to obtain extremely fine aromas. Using only Muscat A Petits Grains Ronds grapes this wine is kept in stainless steel vats on its own fine lees and vinified until all the natural sugars are turned into alcohol. The grapes for the Vouvray sec are cultivated on argilo-calcaire soils and are the earliest harvested to preserve their vivacity. Description: Continuity of style is all-important to Veuve Clicquot, and it is displayed year after year in Veuve Clicquot Demi-Sec. Like Brut Yellow Label, Demi-Sec is a blend of several good years, but behind its white label is a very different wine, sweeter yet equally mature and balanced. Demi-Sec is a Champagne blended from wines of several good years, each one made of the grapes of Veuve Clicquot's legendary Premiers and Grands Crus. The blend comprises about 56% Pinot Noir, about 28% Chardonnay and about 16% Pinot Meunier. The glorious sweetness of Demi-Sec derives from a weighty dosage of sugar mixed with reserve wine. This is added during dégorgement, after the second fermentation, producing a more soft and supple balance but always retaining the freshness so essential in a sweet wine. The wine is bright and clear, a rich yellow colour with golden shades, with a persistent and delightful sparkle. On the nose it is rich and intense, dominated by nutty, spicy aromas- almonds, nougat, honey and ginger. It is of course sweet on the palate, but this is a refreshing sweetness, not in the least cloying. The taste is well balanced, reminiscent of plums and dried fruits. This finish is both soft and very smooth.
