The Russian River Valley is home to La Crema. Here the vineyards are blanketed by cool fog from the nearby Pacific Ocean during the heat of the summer growing season. These moderating conditions are ideal for cultivating Chardonnay with naturally bright acidity and complex flavours. The Wente, Dijon and Rued Chardonnay clones are used in this wine to enhance dimensions of vibrancy and perfumed aromatics. In the vineyard fruit-thinning is undertaken to remove late flowering clusters ensuring even ripening throughout the vineyards. Once ready the grapes are hand-picked from cool climate vineyards, delivered to the winery in small, half ton bins to protect the integrity of the fruit. Once in the Winery a belt delivery system for whole cluster pressing is used to capture fresh fruit flavours and minerality. 100% barrel fermentation and 100% malolactic fermentation take place in French oak barrels, . Next barrel aged sur lie occurs for 10 months with bi-monthly lees stirring for creamy mouthfeel. Finally, the wine is bottled unfiltered to express the pure character of the Chardonnay. The Duttons refer to the vineyard as Triple J-S vineyard. We began writing JJJ’s on each barrel, and soon the winery workers began calling the wine Three Jacks, and the name stuck. The vineyard is planted with four very distinctive Chardonnay clonal selections: the Raffo and Rued Chardonnay field selections, Dijon Clone 96 and UC Davis Clone 15. Bright, natural acidity and vibrant fruit aromas and flavours are a result of typically cool fog-laden nights and warm days. These dry-farmed vineyards planted on low-fertility soils consistantly produce wines of exceptional density, and legendary extract. This old-vine Zinfandel provides alluring aromas of blackberry, sweet pipe tobacco, black pepper and anise complemented by flavours reminiscent of fresh baked blackberry pie with allspice, anise and caramel notes on the finish. Stunningly rich and concentrated, this Russian River Valley Zinfandel has incredible definition of fruit and sweet luscious tannins. Once in the winery the belt delivery system with sorting table purges damaged fruit so that 70% retention of whole berries before fermenting takes place for greater fruit expression. Next a four day, cold soak before fermentation is undertaken enhances soft tannins, next open top fermentation with punch-downs four times daily occurs to extract colour. Aged takes palce for nine months in 100% French oak barrels that refines the finish and the wine is then bottled unfiltered and unfined to express the pure character of Pinot Noir. Finally, the barrel aged wine is left for seven months with bi-monthly lees stirring to create richness in the mouth. This commitment, coupled with the beauty of the Estate's home in Sonoma County's Bennett Valley, has produced a Northern California treasure. Founded in 1977, Matanzas Creek Winery is located on the site of a retired dairy farm in Sonoma County's recently accredited American Viticultural Appellation , Bennett Valley. The Estate takes its moniker from the natural creek running through the area, which was named by Spanish settlers for the Pomo Indian deer hunts once common in the area. Predominately Merlot, this wine is also comprised of a small portion of Cabernet Sauvignon and Syrah. The Merlot fruit is sourced from the vineyard surrounding the Estate and Jackson Park, the Estate-owned mountain vineyard located 930-feet above Bennett Valley. The Bennett Valley fruit benefits from wide swings between daytime and evening temperatures resulting from a cool maritime breeze. This breeze, called the Petaluma Wine Gap is captured by the three mountains that envelop Bennett Valley – Bennett Mountain, Sonoma Mountain and Taylor Mountain. The well-draining, sandy loam soils also contribute to Bennett Valley’s model growing conditions for Merlot. Bennett Valley and Russian River Valley source the Syrah fruit for this blend, while Knights Valley is the primary source of Cabernet Sauvignon. This wine begins with a powerful nose that surpassingly leads with rich Bennett Valley grown Syrah. Black cherries, boysenberry and vanilla prevail on the palette. The Merlot fruit contributes a slight hint of smoke, resulting from basalt, an ancient ocean floor rock found in Bennett Valley soil. The fruit for the Sonoma Coast Pinot Noir is composed of exceptional, small block Pinot Noir vineyards located in the Sonoma Coast. Estate vineyards are the primary sources for this cepage, which is comprised of selected blocks from our Ross Road Vineyard , our Seascape and Annapolis Vineyards and a handful of growers within the Russian River Valley. Centuries old winemaking traditions from Burgundy are combined with twenty-first century technology to produce this juicy and delicious Pinot Noir. Hand harvesting in the cool of the morning, followed by meticulous hand sorting is a pre-requisite before de-stemming directly into open-top fermentors. Individual Pinot Noir batches are held at 50 degrees Fahrenheit for five to seven days before the grapes begin to ferment. During this cold soak, and throughout fermentation, the grapes are gently punched down by hand, to aid in the extraction of color and flavor while minimizing the extraction of hard or ‘unripe’ tannins from the seeds or stems. The wine is aged on fine sediment in small French oak barrels for 11 months and is racked once before bottling. Great care from the vineyard to the winery has produced a Pinot Noir showing aromas of rose petals, cherries, orange pekoe tea, lavender and smoke that are followed by flavours of ripe, red cherries, roasted plums, cinnamon, chocolate, anise and allspice. The complex aromas and dense, sweet mouthfeel are supported by centered acidity and fine grain tannins.
