Description: This wine is a blend of 55% Chardonnay and 45% Viognier that is showing a pale straw colour with an inviting, elegant nose of tropical fruits as well as a lovely hint of jasmine culminating in a long and rich palate that ends with a zesty citrus finish. The mature vines of the Chardonnay bring a solid palate structure dominated by ripe pear flavours, married with the aromatic flavours of peaches and lychees from the ripe Viognier fruit. All the fruit is sourced from the Minervois in the South West of the Languedoc region, Southern France. The Chardonnay comes from older, low yielding vines on the lower slopes of the Montagnes Noires, while small vineyards on the banks of the River Aude are the source for the Viognier. Here soils with high clay content produce vigorous young vines, with regular thinning of the foliage so that the open canopy allows maximum ripening and intensity of flavour. The fruit is harvested in the early hours of the morning when temperatures are coolest to ensure capturing maximum floral fruit characters of the Viognier grape. Both Viognier and Chardonnay are allowed to remain on their skins for 4 to 6 hours after crushing to achieve a balance of palate structure and colour. Next they undergo a long, slow, cool fermentation, the Chardonnay with a traditional Burgundian yeast, while the young Viognier fruit is fermented with an aromatic yeast often used with Sauvignon Blanc. Description: This wine is a blend of 60% Syrah and 40% Grenache is showing a deep brick red colour with purple hues and is brimming with the spicy varietal aromas of the Syrah on the nose. The palate is round, warm and rich with lifted cherry and strawberry fruit flavours complemented by soft tannins with pepper and paprika overtones. The fruit for this wine comes from carefully selected parcels of grapes in the Cote de Roussillon region in the extreme south of the Languedoc in Southern France. Grown on terraced old bush vine vineyards, on chalky 'Garrigue' soils, the vines are described by the locals as 'sleeping in the shade of the Pyrenees with their feet dangling in the Mediterranean'. The hand picked fruit is lightly crushed and destemmed, this enables a percentage of berries to remain unbroken and carry out some carbonic maceration in the fermentation, resulting in a more aromatic wine.The fermenting juice is pumped through its skins 4 to 6 times a day and then, post fermentation, the wine is left on its skins for 20 days prior to pressing providing maximum extraction of colour and structure. Description: After the harvest, wines of Vintage potential are put into oak barrels called 'pipes'. Some eighteen months later a careful and painstaking series of tastings is held to judge exactly which wines of different vineyards merit inclusion in the final blend. If the ideal blend is achieved, the wine is then bottled without any filtration whatsoever approximately 24 months after the original harvest. It was immediately evident during the vintage that the wines would be very intense and fruity. This has been borne out by their development and Graham's 1994 Vintage is rich, deep coloured and packed with fruit. It is distinctly reminiscent of the Graham's 1970.
