Description: In Marsala, the westernmost promontory of Sicily, was found Cantine Rallo a successful integration between nature, technology and tradition. In 1860, at the apex of the shining age of Marsala, don Diego Rallo founded the wine-producing firm that has conserved and amplified the prestige won on the national and international markets. Cantine Rallo is a farm of about 50 hectares and once the grapes are harvested they are put into special box that preserves the quality of the grape berry and then transported to the winery. The grapes are then destalked and crushed, the result is put into a vat where it is allowed to ferment. The fermentation process begins at about 27-30° C. and continues for 20 days. After fermentation the wine requires a period of maturation, approximately 12 months, in French oak barrique or Slavonian oak cask. This is undertaken to enhance and respect the delicacy of the grapes while exalting its varietal strengths. Finnally the wine spends six months in bottle before being released. Using only Nerod'Avola grapes has produced an intense garnet red coloured wine with a delicate bouquet showing notes of berry and scents of sour cherries. Description: Available in Magnum bottles. Planeta has risen spectacularly since inception in 1994, being named Winery of the Year 1999. First produced in the 1999 vintage, Santa Cecilia is made of 100% Nerod'Avola; it is after careful research and experimentation with one of the best Sicilian grape varieties that this wine has been produced. 50% of the grapes comes from the vineyard Dispensa in Menfi and the remaining 50% from the Buonivini estate in Noto. The NeroD'Avola grapes are destemmed and crushed, followed by the process of extraction on skins conducted with 12 days of maceration. After draining the wine is matured in 225 litres Allier oak barrels for 12 months. Description: Winemaker's note: rich ruby red colour, intense and ethereal nose of dried flowers. On the palate it's soft and fruity with notes of cherries and spices that enhance the aromas. It has a long and elegant finish. Aging: 2 months in used French barrique and 3 months in the bottle About NeroD'Avola: Nero means black, while Avola is a small town in the southern east part of Sicily. Sicily was the most important Greek colony in the 5 century BC, and it's believed that NeroD'Avola was brought to Sicily by the Greeks. It grows in many different areas, although it may find the best conditions in the southern east part of Sicily, around the Ispica and Pachino towns . Here the sandy soil and the nice ventilation from the sea provides the best condition to make the most structured NeroD'Avola. This varietal has a lot to offer, good colour, explosive fruit flavours, good structure and a propensity to age well. On the other hand, it may develop high acidity, that's why the sandy soil is important to prevent that. In the last 10 years the quality of the wines has significantly improved, with better care on the vineyards and more resources in the wineries. The results are outstanding (6 x 75 cl) Price: £49.74
