Description: Our Vineyard Selection Cabernet Sauvignon has lush flavors of cherry and plum, with hints of cedar and violets in the nose. The tannins are smooth, making this a great pair with roasted and grilled meats, or fuller flavored fish such as salmon and Ahi tuna. Vineyard: The present generation of Livermore Valley Cabernet Sauvignon was developed from vines that California wine pioneer Charles Wetmore brought from France in the 19th century. The Wente family farms approximately 400 acres of Cabernet Sauvignon vineyards matched to the soils and mesoclimates with rootstocks and clones selected for each site. The climate of the Livermore Valley is ideal for growing red Bordeaux varieties with its long growing season that develops ripe, round fruit flavors. Fermentation: Each vineyard was harvested separately and fermented in upright fermenters. Rack and return was performed twice daily. Rack and return is the process of draining all of the free-run juice off of the cap, then pumping the free-run juice back over the top of the fermenter. This method increases color and tannin extraction and improving mouthfeel through the integration of oxygen. Aging: Each lot of wine was aged separately for 13 months in a combination of new and used French and American oak. (12 x 75 cl)
