Ageing wines from Jerez takes place through the laborious, precise process known as the Criaderas y Solera system. In this process, the younger wines are blended slowly and methodically with other more mature ones. The older wines impart their flavour to the younger ones, while the latter freshen the former due to their youth and strength. All the grapes are from vineyards owned by González Byass in the Jerez Superior area and after approximately 3 years it is ready to drink. A Pale gold colour is complemented by a fragant, delicate Flor aroma producing a sherry that is well balanced, mild and slightly sweet. (6 x 75 cl)

Hidalgo Pale Cream Sherry Sanlucar De Barrameda
Description: A sweet wine with a pale golden colour. This wine has the clean fresh characteristic of a Fino but with the smooth sweetness of the Cream. The Hidalgo family originally came from the north of Spain but moved to the south in the eighteenth century, when King Carlos III was encouraging new people to settle in Andalucia. At first the Hidalgos owned estates in the area, and later 'salinas' for making salt. They then entered the wine trade in 1792 when Jose Pantaleon Hidalgo acquired a sherry business from his father-in-law, thus founding the firm that exists today. Since this time the company has been passed down from father to son and, six generations later remains completely independent and is still owned and run by the Hidalgo family. Today it is one of only a handful of fully independent Sherry producers and the company continues to occupy its original premises in the centre of Sanlucar de Barrameda and has always been one of the most important bodegas in this town. (12 x 75 cl)
