Description:
Sarantos and Constantina Moularadellis developed a small vineyard and founded Kingston Estate during the 1960s and 1970s, they brought the food-and-wine-loving traditions of their sun drenched Greek homeland to the equally sun-drenched Riverland district of South Australia. The wine shows good depth, being medium red to red/purple in colour. On the nose there is abundant raspberry, cherry and plum jam characters. These continue onto the palate which is rich and warm with soft fleshy tannins, fresh berry fruit and a hint of sweet French oak. After crushing,the juice was fermented on skins with pumpovers daily to ensure maximum extraction of colour and flavour. The wine was matured with 75%French oak and 25%American oak. (12 x 75 cl)

Making sure the berries were picked at their optimum levels, night harvesting was employed at approximately 13° to 14° Baume thus avoiding any likelihood of harsh phenolics or loss of flavour. Small batch fermenting in static fermenters with a neutral yeast has enabled full fruit flavours to develop. The fruit was picked at optimum ripeness and immediately crushed with total de-stemming. The must was pressed to steel tanks and left to cold settle overnight. Fermentation was carried out at a controlled temperature in steel and the wine was racked off the lees in order to maintain the fresh fruit character. Finally, it was bottled after cold stabilisation and filtering and ready to drink on release.
Ashbury Grove Cabernet Shiraz Reserve South Eastern Australia Description: This wine is a blend of 55% Cabernet Sauvignon and 45% Shiraz that is almost opaque with a sweet nose of ripe dark fruits and hint of peppery spice. The palate is medium to full bodied with bags of rich fruit character, soft tannins and a long, concentrated finish. Ashbury Grove range is made by KingstonEstate, based at Kingston-On-Murray which is approximately 220 km from Adelaide in SouthAustralia.KingstonEstate was founded by Sarantos and Constantina Moularadellis, who developed their 40 acre. The use of static fermenters,neutral yeasts and cold fermentation over a period of 2 to 3 weeks, has produced a clean,crisp,contemporay style of Chardonnay. With only 5%French Oak treatment just a hint of added flavour complexity has also been achieved. The result is a wine light straw in colour,with wonderful peach and tropical fruit aromas.The palate is dry and crisp with a clean elegant finish reminiscent of lychee and melon.With just a hint of acid on the finish,this wine is a delight to drink. The bouquet is showing lifted tropical fruit over aromas of coconut and apricots. There are plenty of fruity flavours with layers of attractive peach, grapefruit and melon fruits well integrated with the creamy vanilla barrel ferment characters. Only the free-run juice was used to minimize phenolic content and fermentation temperature was carefully controlled to ensure maximum retention of varietal characters. This has produced a pale yellow coloured wine with green tinges, the nose is unmistakably Sauvignon Blanc with pungent herbaceous fruit characters of tomato leaves, lantana and capsicum. The herbaceous characters continue onto the palate where they are complexed by pineapple and passion fruit, tropical fruit flavours. A racy acid backbone gives this wine a lip-smacking finish. Using only the best quality fruit and adopting the practice of soft pressing so that only free run juice is used in the winemaking process. This has resulted in a range of wines showing full fruit characters. This is a rich and warming wine style with infinite drinkability. Grapes were selected from vineyards throughout SouthAustralia including the Clare Valley, Adelaide Plains and the Riverland. Parcels of fruit which showed generous fruit concentration were identified and treated in the Soft Press winemaking style. After crushing the grape skins were handled gently to maximize the variety's pure and clean flavours during the ensuing fermentation process. Only a small portion of the wine was matured with American and French oak with the intention being to allow maximum fruit expression and the oak adding subtle complexity. The Sarantos Shiraz is a deep plum red colour while on the nose it has rich licorice, chocolate, plums, dark berry fruits and subtle spiciness and is very much like a warm Christmas fruit pudding. These attractive flavours continue onto the palate and are fused with soft charry characters and maraschino cherries. The fruit was fermented as separate components in 20t static fermenters. A portion of the wine was drained off to finish fermentation in new American oak barrels. Adelaide Plains and Clare Valley ferments were transferred to new American oak barrels for completion of fermentation. The remaining ferments were drained and pressed with light pressings combined with the free run juice.The wines were left to settle for 7 days and then racked to new and one year old American and French oak barrels for 18 months maturation. This has produced a bright, deep red coloured wine with youthful purple hues. The bouquet is full of complex fruit characters showing rich fruitcake, dark chocolate and licorice notes integrated with blackberry and mint, together with some spice and coffee oak flavours. Great flavour concentration, opulent mid palate fruit and fine ripe tannins make this is a wine to savour. The oak underpins the fruit and provides flavour complexity and structure to the wine.
