Springfield Estate Methode Ancienne Chardonnay is in the ancient style of Burgundy, a technique with wild yeast and no fining/filtration rarely used in the new world. The result is a wine of distinctive and classical character. It will develop slowly and is made to last, we hope, a lifetime. These are wines hewn from the ground rather than made to a recipe in a lab and Springfield is now one of the first names to appear on any list of ‘Top SA Wineries’. If you ever get the chance to go and visit Jeanette and Abrie at Springfield, you'll understand why this single vineyard Sauvignon is called Life from Stone. The rocky, arid terroir looks just about the most inhospitable place a plant could choose to grow. Make no mistake, these vines really struggle for their art. Their efforts are well worth it though, as the hardship seems to push them to ever greater heights. Intense and minerally, this would beat many a top Sancerre in a pepsi challenge.
