The fruit comes from a few different parcels of land and is all hand-picked. The wine is vinified in stainless steel and undergoes 100% malolactic fermentation. It is not filtered or fined and is bottled in the summer following the harvest. Aladame is one of the rising stars of the younger generation of French vignerons, and has already attracted a considerable amount of attention in France. His wines are deeply serious and rank among the best to come from this appellation. Unlike many young winemakers, he isn't carrying on a family tradition.
