The wine was handcrafted in the To Kalon Fermentation Cellar with traditional techniques, including hand-sorting of the clusters, gravity-flow movement of the must and wine, and fermentation in a traditional oak tank. The wine then undergoes Sixteen months of ageing in new French oak chateau barrels that added vanilla and toasty oak accents. To retain fully this wine's enormous depth, texture and length of finish, it was bottled without fining or filtration. Deep, intense dark fruit character, with mineral, violet and earthy truffle complexity, this wine is powerful yet elegant, with beautifully integrated firm, muscular tannins, promising long ageing potential. Robert Mondavi have long recognized the distinctive vineyards of California's coast. For decades they have sourced fruit from coastal regions, and in 1994 introduced Robert Mondavi Private Selection wines to exhibit the high quality and character of the coastal grapes and vineyards. For vivid fruit expression, Mondavi harvested 95% of the grapes from Monterey County, with the balance from Santa Barbara and San Luis Obispo Counties. Approximately half of the Pinot Noir grapes were harvested from its own vineyards, the balance from well known local growers. This wine has a little Syrah and this has come from both San Luis Obispo and Monterey Counties. To achieve the fruit-forward style of this Pinot Noir Mondavi lightly crushed the grapes and fermented the must in temperature controlled tanks. After the wine fermented dry , it was left on the skins with the wine for a total of 13 days to naturally soften tannins and develop varietal complexity. The wine completed malolactic fermentation for roundness and depth and was aged for five months, in a combination of new and older French and American oak barrels, to add toasty nuances to the lush fruit flavours. Additionally, a blend of 5% Syrah enhances the spicy profile of the wine. The wine's silky layers of cherry, raspberry and red plum intertwine with fragrant allspice and floral accents. Description: A great deal of care and expertise is required to produce this wine which is a collaboration between Robert Mondavi and the Chateau Mouton Rothschild families. The brainchild of two leading lights of the wine world, Robert Mondavi and Philippe de Rothschild, Opus One is a Napa Valley based joint venture with a commitment to quality and perfection. Its magnificent location, opulent winery and state-of-the-art technology is grape nirvana. The grapes are hand sorted and it is only gravity that is used to move the berries from the destemmer into the stainless steel fermenting tank. As Opus One only makes 1 wine each tank is used only once during harvest so that fermentation and maceration do not need to be rushed. The tank draws out a myriad of rich flavours and colours from the grape skin, seed and pulp. The tanks are then raised so the free-run wine can flow into new French Oak Barrels, while the residue that provides the backbone to this wine is also barrel aged. Once ready Fining takes place that clarifies and polishes the wine. The 1997 vintage is a blend of 82% Cabernet Sauvignon, 8% Cabernet Franc, 5% Merlot, 4% Malbec and 1% Petit Verdot. During the growing season abundent sunlight in the previous vintage produced high fertility in the vine buds and a large crop was thinned to the lowest per acre yield in a decade. As a result of this the harvest was very compact lasting just 11 days and produced wines of vigor with finesse. A complex, vigorous, fresh tasting wine showing currant, anise, black cherry, mineral, leather and sage flavors with delicate liquorice flavours and scents. All of the grapes for this wine were grown in the world-renowned Oakville region surrounding our winery. Designated an American Viticultural Area in 1993, Oakville is distinguished by an alluvial fan extending from the base of the Mayacamas Mountains that form the valley's western border. The Oakville bench, which lies against the hills, has well-drained soils that allow deep rooting and the development of complex flavours in the grapes. Mondavi selected all Oakville bench vineyards for this wine, including 82% from Robert Mondavi's historic To Kalon Vineyard. Mondavihand-harvested the grapes into 40-lb. boxes during the cool morning hours. The clusters were then hand-sorted on tables in the To Kalon fermentation cellar for optimum quality. The grapes were destemmed and lightly crushed directly into a new 17-ton oak fermentation tank. The must was fermented with a combination of native and cultured yeast for layers of complexity, and follwed this with 24.5 days of skin contact to soften tannins. After the free-run wine was drained off the pomace, the drop-gate was opened to gravity-convey the pomace to a gentle basket press. The wine was then gravity-fed to barrels to undergo malolactic fermentation and ageing. To achieve natural clarity, the wine was racked three times during 16 months of ageing in traditional French oak chateau barrels . The wine was then bottled without fining or filtration. The ripe, sweet fruit character of the Cabernet Sauvignon exudes creme de cassis and juicy blackberry character. Complex nuances of spices, vanilla, minerals and cedar weave through the lush fruit flavours culminating in a long finish. (6 x 75 cl) Price: £143.29
