Affectionately known as the Prince of Southern Italian Winemaking, Garofano is Italy's top authority on the grape varieties of Italy's south and a champion of southern Italian winemaking. Candido's estate-grown and -bottled Salice Salentino DOC blends 95% Negroamaro and 5% Malvasia Nera grapes harvested from low-yielding 30-year-old vines. A Rose wine blend of Negroamaro 95% and Malvasia Nera 5%. The destemmed and crushed berries are cold macerated for some 20 hours after which a part of the juice is drained off and fermented in stainless steel using cultured yeasts. Bright and corraline in colour, rich on the nose, opulent, floral with fine fruit, on the palate it is dry, harmonious, rich and elegant with a pleasantly bitter aftertaste. (12 x 75 cl)
