Domaine Virginie benefits from the climatic conditions of the Languedoc-Roussillon, a very sunny and quite windy region, which enables the grapes to mature well. The grapes are quickly chilled upon arrival at the winery and the entire fermentation process is temperature-controlled. 40% of the fermented production is aged in barrels, where the different origins of wood produce an interplay of rich and varied aromatic qualities. The golden-yellow coloured wine with copper shades are complemented by the very complex nose, a subtle blend of exotic fruit aromas such as mango, plus a few hints of pear and white peach. The palate is full-bodied, delicately vanilla-flavoured and toasted, with perfect integration of the barrel where the fruitiness and freshness of the varietal remain intact. There is a good balance between the acidity of the finish and the complexity of the length in this enjoyable Chardonnay.
